Our Story
Thyme Savours was founded by Connie and Jim Giese in June 2001.
Jim and Connie
have long served in the food industry. Whether catering for businesses
in Wisconsin and Florida or managing the deli at Woodlake Market
in Kohler, their purpose has always been one and the same: create
the most exciting dishes and flavors and set home-style settings
that invite their guests to savour the finer things in life.
Connie
has been involved in the food industry for over 22 years.
She has operated catering businesses out of her home on and off for
most of these 22 years. Connie’s experience in the food industry
ranges from operating catering services, managing the deli and
bakery at Woodlake Market in Kohler, and acting as a recipe consultant
for the American Club Cookbook.
Jim has been involved in the
food industry for over 14 years. He has assisted Connie in catering
for most of his career. He was also heavily involved with the Cajun
Queen concession stand at Road America, which included managing
catering activities for corporate parties in Wisconsin and Florida.
Location History
Thyme Savours is housed in the restored Elkhart Lake Feed Mill and
original train depot, located at the corner of 44 Gottfried Street
in Elkhart Lake.
The train depot was originally constructed in 1872
and in April of 1888 was moved and attached to the feedmill. It
continued as a working mill until Roy Dreifuerst, who owned and
operated the feed mill for almost 40 years, sold the building to
its current owners, Julia and Steve Sutcliffe, in September 2000.
The
extensive restoration of this landmark property was carefully executed
to complement the beauty and repose of thriving and quaint Elkhart
Lake. In fact, the Sutcliffes were conscious to salvage as much
of the original timber and materials during the restoration as possible
and reuse them in the interior to maintain the building’s historical majesty .
It was this majesty, this charming grace, that
drew the Gieses to it for their deli and café. What better
setting to show off their fine cuisine and create a setting of
peace and serenity?
