In determining the quantity of hors d'oeuvres, even if you think your guest list is made up of light eaters; do not underestimate the appetites of your guest. Keep in mind what purpose the hors d'oeuvres will serve. If a meal is to follow, they should not be too filling. If hors d'oeuvres are to precede a substantial meal, order 5 to 6 different ones, each yielding 1 to 2 pieces per guest. For a hors d'oeuvres only party select menu items more substantial. Offer 8 to 10 choices, each yielding 2 to 3 servings per guest.
All of our hors d'oeuvres are bite size, garnished with fresh herbs, flowers, fruits or vegetables. All are presented on a variety of platters and baskets to suit the occasion and setting.
